This hearty waffle brunch sandwich is loaded with deliciousness.

Savoury waffles topped with beef patties, bacon and avocado are guaranteed to set the mood for a lazy day. Go alfresco and cook the toppings on the barbecue or, if the weather’s not great, cooking them on the stovetop works just as well.

Serves 4

Waffle ingredients

• 2 cups self-raising flour
• 1/2 tsp salt
• 1/2 cup parmesan, finely grated
• 2 eggs, separated
• 1 1/2 cups milk
• 1/3 cup cooking oil, plus extra for waffle iron

Sandwich ingredients

• Cooking oil, for frying
• 4 beef patties
• 250g thick-cut bacon
• 200g halloumi, cut into thick slices
• 4 eggs, separated
• salt and pepper, to taste
• 1 avocado, mashed
• 1 cup crazy peas

Method

1. Make the waffles. Sift flour and salt into a large bowl. Add the grated parmesan and mix well.

2. In a separate bowl whisk the egg yolks, milk and oil together. Pour into dry ingredients and mix well.

3. Beat the egg whites until stiff, then fold into the batter.

4. Preheat the waffle iron and grease with oil if necessary.

5. Ladle in waffle mix and cook as per the waffle iron’s instructions. Set the waffles aside.

6. Sandwich: Heat the barbecue or a frying pan to medium heat. Liberally drizzle with oil.

7. Cook the beef patties and bacon for 5 minutes, then turn and cook for another 5 minutes. Remove bacon and finish cooking patties until fully cooked through, about another 5 minutes, then remove the patties.

8. Crack the eggs onto the barbecue or into the frying pan and season with salt and pepper. Add the halloumi slices and fry to your liking.

9. Load up the waffles with mashed avocado, crazy peas, halloumi, a beef patty, bacon and a fried egg. If you’re up to it, top with another waffle. Serve with your favourite brunch beverage.
