Move over French Toast! This quick and easy French Crumpets and bacon recipe is heaven on a plate
You've tried French toast, but now it's time for French crumpets!Â
This simple breakfast will become one of your favourites in no time. It really is heaven on a plate.Â
Try Jamie Oliver's idea of adding some finely chopped chilli to the egg mixture or sprinkling over the top – delicious.Â

Ingredients:Â
• 2 large free-range eggsÂ
• Sea saltÂ
• Freshly ground black pepperÂ
• 6 rashers smoked baconÂ
• Olive oilÂ
• 4 crumpetsÂ
• Maple syrup to serveÂ
Method:Â
1. Lightly whisk the eggs with a small pinch of salt and pepper in a bowl. Add the crumpets and really push them into the mix, turning a few times to coat. Set aside. Â
2. Heat the oil over medium heat in a large frying pan and add the streaky bacon. Leave for a few minutes on each side until crisp.
3. Push the bacon to one side and tilt the pan so the fat runs into the middle. Add the crumpets to the pan and fry them for a few minutes on each side until golden.
Serve the crumpets topped with the bacon rashers and drizzle over the maple syrup.Â
Tip: Leave the crumpets to soak up the egg mix overnight in the fridge.Â
