How to turn ice cream into muffins!

Can you believe this recipe contains only TWO ingredients - and makes super delicious muffins?!

All you need is 500ml of softened vanilla ice cream and 250g of self-rising flour.

Method:

  1. Preheat oven to 220 degrees C.
  2. Grease a tray of 12 muffin cups.
  3. Mix self-rising flour and vanilla ice cream together, until smooth.
  4. Spoon batter in muffin cups, filling them to be 3/4 full.
  5. Bake in the oven for about 20 to 25 minutes - or until a toothpick inserted into the centre of a muffin comes out clean.
