What You’ll Need:
1 x 2kg Pork Shoulder joint, skin removed, cut into large chunks
2 tbsp sunflower oil
2 tsp fennel seed, roughly ground
3 tsp smoked paprika
1 tsp black pepper
2 tbsp soft brown sugar
1 tbsp fine salt
1 tsp oregano
1 tsp garlic powder
2 tbsp cider vinegar
1/2 cup apple juice
2 tbsp american mustard
2 tbsp ketchup
1 tbsp chipotle sauce
buns and pickles, to serve
How You Make It:
Remove the saute pan from the cooker. Place over a medium heat and heat the oil. Brown the pork well on all sides. Colour means flavour. Season with the salt as you go. Place the saute back in the cooker with all the pork, then add all the spices and sugar, along with the vinegar and apple juice. Place the lid on and cook on low for 8 hours. Remove the pork, put the residual sauce/juices back on the hob and add the mustard, ketchup and chipotle. Simmer and reduce until thick (but not jam-like). To serve, shred the pork and pop on a toasted bun. Spoon over the sauce and add pickles. Demolish!!
